Going beyond just being pure vegetarian, now there is a new trend of vegan that is followed by many. And introducing a complete vegan menu, The Real Green Cafe has carved its niche in this genre of hoteling. This cafe offers a large menu of vegan food. Being completely vegetarian, it also avoids any dairy products.
My Indian Dream spoke with Aishwarya Vishwanath, the owner of this restaurant located at Koregaon Park who follows vegan food.
Tell us about your restaurant being a complete vegan.
There are many pure vegan restaurants found in the western country, but here in India the idea still needs to be rooted down. There are many pure vegetarians in Indian but being completely vegan means not using dairy products too. Our cafe does not use even dairy products which is something new in the city.
No dairy products, so how does a cafe work?
We use soya milk and coconut milk to make our coffees and teas. Also when it comes to cheese, we have our in house team that makes cheese from soya milk. And we replace paneer with tofu. Our cheese being light, people love to have it without finding any difference between real cheese and cheese made from soya milk.
Any specialty in your menu.
Yes, we have special pizza stuffed with our in house cheese made from soya.It feels light as compared to other pizzas and our guests love this. We have our guests eating a whole lot of pizza and still feel light. Also sandwiches and other things made from tofu are well appreciated by our guests.
What do you do to avoid food wastage?
We make everything fresh so there is point of food wastage. The only food that might get wasted in our cafe is bakery products. So we have already spoken to few beggars in our locality to whom we give if bread is left.
